Tomato and Garlic Pasta Sauce

Here is a nice easy one for you all. I absolutely love pasta! A nice simple pasta dish with a tasty pasta sauce was always an easy lunch for me to put together. However, most store bought pasta sauces contain so much sugar, and who knows what else! I have never looked back since making my own, it has such a rich full flavour, that store bought sauces just taste bland to me now! I hope you enjoy this one as much as I do.


Ingredients (Serves 2)

  • 4 large ripe tomatos
  • 3 garlic cloves
  • 1 medium white onion
  • Handful of fresh basil leaves
  • 1 teaspoon of mixed herbs
  • 1 tablespoon of olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of honey (maple syrup if you are vegan)
  • Sprinkle of salt and pepper


Chop the tomatoes, garlic cloves and onions into small pieces and place in a large saucepan. Break the basil leaves from the stalks and place in the saucepan also. Add the salt, pepper, mixed herbs, honey and coconut oil and stir everything together. Put on the heat and bring to the boil. Place the lid on the saucepan and simmer for 20 minutes, occasionally stirring. After 20 minutes, remove from the heat, add the apple cider vinegar, and stir.

Finally either using a blender or a handheld wisk, blend everything together for about 1 minute until nice and smooth. Store in a steralised jar until ready to use. Enjoy!
