This is the easiest recipe so far! Homemade sweet potato fries always taste so much better than anything you’ll find in a shop! You can either go for super thin fries for extra crunch, or you can make big chunky fries that are still soft on the inside! Either way, I think you’ll love them.
Ingredients (Serves 2)
- 1 large sweet potato (or 2 medium)
- 2 teaspoons of paprika
- 3 tablespoons of coconut oil
- Sprinkle of salt and pepper
Start by pre-heating your oven to 220C fan/240C. Peel the sweet potato and slice into pieces about 3 inches long and about 1cm wide. Make them slightly thinner if you want extra crunchy fries.
In a large bowl mix the melted coconut oil with the paprika. Taking a handful at a time, mix the uncooked fries in the bowl of oil and paprika, making sure each fry is evenly coated. Add the fries to a large baking tray, making sure that they do not overlap. Finally sprinkle with salt and pepper and place in the oven for 20-25 minutes, making sure to give them a quick stir after 10 minutes. Serve up and enjoy!
