Raw Super Seedy Butter

I love nut butters, but unfortunately not everyone can eat them, so using seeds can be the next best thing! Seed butters are so incredibly good for you, and they taste great, so even if you are a huge nut butter fan, you should definitely give this one a try! Now I know a lot of people like to roast the seeds before blending them, but I prefer to keep them raw, and I so I just soak the seeds overnight. Pumpkin seeds, sunflower seeds and flaxseeds combined contain high levels of all the vitamins and minerals we need to stay fit and healthy, particularly zinc and vitamin E, which are great for the immune system and the skin.

Ingredients (Makes 1 jar)

  • 200g of sunflower seeds
  • 100g pumpkin seeds
  • 100gĀ ground flaxseed
  • 1 teaspoon coconut oil, pumpkin seed oil, sunflower oil or canola oil
  • a pinch of salt

Optional

  • 2 teaspoons of date syrup

Soak the pumpkin seeds and sunflower seeds in water for 6-8 hours, or overnight. Rinse the water and place all of the ingredients into a food processor. You will need a fairly powerful food processor to do this, otherwise you may end up with bits of whole seed in the mix. Process the seeds for 2 minutes at a time, making sure your processor does not overheat, and do this until you get a smooth butter, it should take around 10 minutes. Make sure to scrape down the sides of your processor to make sure everything gets mixed together! Scoop the mixture into your jar and enjoy!
