Spiced Apple and Sultana Porridge

Autumn is in full swing, with pumpkins on sale, crispy leaves falling from trees and Halloween films on TV. Now is the perfect time to start making warming dishes with lots of spices and autumn fruits.

Ingredients (serves 2)

  • 100g of oats
  • 250ml of almond milk (300ml if using jumbo oats)
  • 4 tablespoons of sultanas
  • 1 red apple
  • 1 and 1/2 teaspoons of cinnamon
  • 1/2 teaspoon of ground ginger
  • 1 tablespoon of maple syrup or honey
  • 1 tablespoon of water

Chop the apple into small cubes and place in a small saucepan with the maple syrup, water, cinnamon and ginger. Stir and cook on a medium heat for about 5 minutes, you don’t want to apples to turn to mush. When ready, put the one side and put your oats, almond milk and sultanas into another saucepan and cook on a medium heat for about 4-5 minutes. Keep stirring to make sure the oats do not stick to the bottom and add a little water if the oats are too thick for your tastes.

Serve up the porridge, and pour the apple chunks over the top, including the apple syrup left in the bottom of the pan. Eat straight away and enjoy!
