Simple Veggie Stir-Fry

I love a good stir-fry! There are so many different varieties; I could eat it all the time! Here is just one that I love, its so simple and yet so tasty. You have the soft noodles and pak choi, with the crunch of the broccoli and red cabbage, just perfect!


Ingredients (serves 2)

  • One pack of baby corn (around 125g)
  • One quarter of a red cabbage
  • One pack of mangetout (around 50g)
  • One half of broccoli
  • One small carrot
  • 3 baby pak choi
  • One pack of soba (buckwheat) noodles or rice noodles (use about 60g per person)
  • Home made Chinese style stir-fry sauce


Finely chop the carrot into thin strips and chop the broccoli into small pieces. Cut the baby sweet corn down the middle lengthways. Separate the pak choi leaves and cut the cabbage into strips no longer than 2 inches.

Now start cooking the noodles, this should take no longer than 6 minutes, but cooking instructions can vary depending on the brand of noodles used.

In a large frying pan or a wok, heat a tablespoon of coconut oil. Place the broccoli in the frying pan for one minute, and then add the rest of the vegetables. Stir the contents; making sure everything is evenly cooked, for two minutes. Now add the Chinese style stir-fry sauce, and stir. Once the noodles are ready, drain and stir them into the stir-fry and cook for an extra one-minute, allowing the noodles to absorb the flavours from the sauce. Serve up and enjoy!
