I’ve been investigating the paleo diet recently. I love to find out the health benefits, reasoning, difficulty etc… I have a friend who recently decided to change her diet to a paleo diet, and so I have been putting some recipes together for her. It’s been quite exciting experimenting with different ingredients! For me, the only real change was removing grains, and so finding substitutions for where I normally use grains was great fun. I love playing around in the kitchen, and I think I have achieved some great results!
- 3 tablespoons of desiccated coconut
- 2 tablespoons of milled flax seed
- 2 tablespoons of ground almonds
- 1 tablespoon almond butter
- 1 teaspoon of coconut sugar (2 teaspoons if you like a sweet porridge)
- 200ml of almond milk
- 1 mango
- Sprinkle of flaked almonds
- Sprinkle of flaked coconut
Add your almond milk, desiccated coconut, milled flax seed, ground almonds, almond butter and coconut sugar to your saucepan, and heat on a medium heat. Keep stirring to prevent anything from sticking to the bottom of the pan. Heat for about 5 minutes, or until the porridge starts to become thick. Add more milk if you like your porridge a bit runnier. Serve up and top with your favourite toppings. I love this porridge with some fresh mango and flaked almonds and cococnut. Enjoy!
