Matcha and Coconut Cookies

This is one for green tea addicts! Matcha green tea is believed to have 10 times the potency of regular tea, as well as a high anti-oxidant content. Full of vitamins and minerals and great for cleansing!

Ingredients (Makes about 12 cookies)

  • 100g of buckwheat flour
  • 50g of ground almonds
  • 6 tablespoons of maple syrup
  • 2 teaspoons of matcha green tea powder
  • 3 tablespoons of coconut oil, melted
  • 100g of desiccated coconut

Pre-heat the oven to 180C/160C fan and cover a baking tray with parchment paper.. Add all of your ingredients to a large mixing bowl or to a food processor. Blend everything together until you get a sticky dough. If you’re using a mixing bowl, you may find after awhile it is easier to mix with your hands.

Scoop up with your hands about a tablespoon of mixture and roll it into a ball in your hands. Place on the baking tray and press into a thin disc about half a cm thick. Do this until you have used all of the mixture and place in the oven for 15 minutes or until the sides of the cookies start to brown.

Leave to cool for about 30 minutes and store in an airtight container. Enjoy!
