An essential side dish for any Mexican meal, nice chunky guacamole made with fresh avocados. Never eat store bought guacamole again.



  • 2 avocados
  • Juice of 1 large lime
  • 1/2 teaspoon of salt
  • 6 cherry tomatoes
  • 1 small red onion
  • 1 medium chilli, deseeded and finely chopped


To make the guacamole, peel and de-stone the avocados and mash with a fork into a bowl. Finely chop the tomatoes, red onion and chilli, and mix in with the avocado. Add the lime juice and salt, and stir. Store in the fridge in an airtight container until you are ready to serve, it will keep for up to 5 days.
