I was thinking “it’s about time I put together a pancake recipe”, and so here we are! I love pancakes! So easy to make and so many different flavour combinations. When my mum would make pancakes for me on pancake day, I would always think carefully about what I would put on top, as I was usually full by the third pancake! I love lemon and sugar, strawberry jam, blueberries and maple syrup, nutella etc… Now I never had bananas with pancakes until I visited America, and I could think was “where have you been all my life??” Drizzle banana pancakes with chocolate syrup was something else, and so I couldn’t wait to create my own version!
This recipe I super easy to put together and doesn’t take much time at all. The banana taste is so good in the pancakes and covered in gooey cacao sauce makes them just perfect!
Ingredients (Makes 6 small pancakes)
For the pancakes
- 2 ripe bananas
- 1/2 cup of buckwheat flour
- 1/2 cup of almond milk
- 1 tablespoons of cacao powder
- 1 tablespoon of maple syrup
For the chocolate sauce
- 2 tablespoons cacao powder
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil
You have two options. You can either place all of the ingredients for the pancakes into a blender and bland for around 1 minutes, until you get a smooth batter, or you can mix everything by hand. If you do not have a blender, first mash the bananas in a mixing bowl with a fork until you get a puree. Add the milk, buckwheat flour, maple syrup and cacao powder and mix everything together. You will still have some lumps of banana in the mix, which I actually love since you really taste it in the finished pancakes!
When your batter is ready, heat up a frying pan on a high heat and grease with some coconut oil. When the pan is really hot, turn it down just a tad, and you are ready to go. Add 2 tablespoons of mixture to the pan for each pancake. They only take about a minute to cook on each side, so keep an eye out that they do not burn. When the outer edges appear cooked, you can use a spatula to flip the pancake over, and cook for another minute. Serve up and start your next pancake.
When your pancakes are ready, you can make the chocolate sauce. This doesn’t take very long and the pancakes will be very hot still. Use a small saucepan and add all of your chocolate sauce ingredients. Heat on a medium heat and keep stirring until everything has melted and all of the ingredients have been mixed together. When ready, pour all over your pancakes, serve up and enjoy!
