These are a great snack to have on the go, and are very simple to make. So chocolatey and nutty and full of protein. I hope you enjoy them as much as I do.
- 10 soft dates
- 100g of popped/puffed quinoa
- 100g of almonds, coarsely chopped
- 250g of almond butter
- 2 tablespoons of coconut oil
- 100g of cacao/cocoa butter
- 4 tablespoons of cacao powder
- 2 tablespoons of maple syrup
Start by pitting the dates and soaking them in hot water for 30 minutes. Next melt the cacao/cocoa butter in a saucepan over a low heat, then add the cacao powder and maple to the mix, and stir well. Grease a square baking tray with a little coconut oil, and then pour the chocolate mix into the base.
Next heat the coconut oil and almond butter in a saucepan on a low heat until well blended. Add the popped quinoa and chopped almonds to the saucepan and stir. When the dates are ready, drain the water and blend in a food processor for about 30 seconds, until the dates have broken down and are almost smooth.
Add the dates to the saucepan and stir until all ingredients are combined. Pour this mixture into your baking tray on top of the chocolate base and place in the freezer for 2 hours. Once set, slice into squares and store in the fridge until you are ready to enjoy.
