Apple and Cinnamon Granola

I mostly have a nice hot bowl of porridge for breakfast, but every now and then I crave a bowl of some kind of cereal with fresh almond milk. I used to love honey nut corn flake when I was a child, but just looking at the ingredients on the cereal packet makes me shudder a bit. After a friend told me that they make a simple granola instead of buying a box of cereal, I needed to make one for myself! There were so many flavours I wanted to try, but the first that came to mind was a gorgeous apple and cinnamon combination. After discovering how easy it is to make, I always have some ready in my cupboard. I hope you love this super easy to make breakfast!

Ingredients (Makes one large container)

  • 2 cups of jumbo oats (gluten free)
  • 1 cup of almonds
  • ½ cup of pumpkin seeds
  • ½ a cup of sunflower seeds
  • ½ a cup of flaxseeds
  • 1 tablespoon of cinnamon
  • 4 tablespoons of coconut oil
  • 4 tablespoons of maple syrup
  • 3 medium apples or 2 large apples (Pick your favourite variety)

Optional

  • 1 cup of raisins

Preheat the oven to 160°C (fan)/180°C

Mix all of the dry ingredients into a large bowl and put to one side. Chop the apples into a mix of small and medium pieces and add to the dry mix. I like to really stir in the apples so that the other ingredients stick to the apple pieces. Next add to a small bowl melted coconut oil and the maple syrup. Mix the wet ingredients to the dry ingredients and stir thoroughly.

Take your baking tray and spread the mixture out evenly. Put in the centre of the oven (top of the oven if using a gas oven) for 35-40 minutes until nice and crunchy, making sure to give to give the mixture a good stir every 15 minutes to ensure that the top does not burn. When ready, leave to cool for 10 minutes and then stir in the raisins before storing in an airtight container. This granola will keep for about 5/6 days. Enjoy!
