Berry Macaroon Squares

Mixing my homemade jam with coconut goodness. These squares have a nice crunchy biscuit base with a sweet jam filling and a crumbly coconut granola topping.

Ingredients makes 12

Base

  • 100g of buckwheat flour
  • 5 tablespoons of maple syrup
  • 75g of ground almonds
  • 3 tablespoons of coconut oil

Middle layer

Top layer

  • 150g desiccated coconut
  • 75g of ground almonds
  • 2 tablespoons of coconut oil
  • 2 tablespoons of maple syrup
  • 4 tablespoons of almond milk or water

Cook base for 12 minutes at 180C fan

bake for another 15 minutes
